What a great experience. This gentleman knows his knives. He is a 95 year old, 5th generation knife craftsman. This is where you need to buy your knives if you are in the Kyoto area!
We chance upon this shop while going around Kyoto. It is fates that brought us to this shop. It has been the best shopping experience in my whole life. I have been looking for tools for my farming work and I found this gem. Not only does he has authentic Japanese kitchen knives, he has many others knives for other works and task. Tool knives which you can only see in samurai era movie. Vintage. I don't think they make those anymore.I got from Mr Kosaka a classic Japanese saw and a garden knife. He was so patience to explain to me different types of saw. For crafting and carpentry is different teeth and for sawing trees is different teeth. I got the latter. Also he taught me how to sharpen the saw and take care of it. Ended up with another foldable saw which he gifted.He wrap up everything so nicely for me. Kosaka cutlery store will surely be where I am whenever I return to Kyoto. I think I will return there for a sickle, an axe and a few knives soon :-)
Top quality craftsman knifes, super recommended as these are unique, you won’t buy them in another store. The owner received us with a smile and with patience. Thank you for your attention and kindness, it was great to meet you.
I wrote this review after using the knife for five months now. I use it every day and the sharpness and sturdiness beat all the Thai, German, and Vietnamese knives I have owned so far.I visited the Shop randomly and was amazed by all the knives the owner has in the shop. The price was extremely fair, and the experience was amazing. I'm coming back soon and will purchase another knife for sure!

On the walls hang historic guild certificates and even the imperial chrysanthemum crest — a testament to generations of excellence.Here, knives are not just products — they are omise craft, a house of trust.We chose beautiful Damascus steel knives (層状鋼) — over 32 layers, perfectly balanced and sharpened to absolute precision. We trusted all the other reviews and were not disappointed. Lovely small shop in Kyoto with a kind proprietor who clearly has deep roots in the community as well as cutlery and metal work. We purchased two knives of Damascus steel as well as bone tweezers and a grater. We changed our train time in order to squeeze in a visit to this shop before heading home, it was worth the effort. I’m looking forward to prepping meals with the memory of this shop and shopowner in mind. FYI: Cash only, but there is an ATM at the 711 two blocks away if you need it.

If you are looking for quality Japanese kitchen knives, this is the place to go. It is run by the loveliest fellow. He showed me multiple times how to sharpen the blade, showed me the different types of knives and their uses, and he wraps everything up beautifully.I am so glad I chose this store as his prices are unbeatable and I was so happy to purchase from him over going to one of the touristy, soulless stores in Nishiki market and the surrounding area.The shop stocks carbon knives and stainless steel knives. Some are for vegetables, some are for small fish, some are multipurpose.The shop accepts cash payments only.

Reiterating everyone else' reviews: it's a really quiet, unassuming storefront run by a very sweet, clearly passionate man. Had a really nice conversation with him about how his friend makes all of the knives. Bought 2 knives as a gift for friends after buying knives in Osaka. While I'm sure both stores and knives are high quality, I loved the quaint local vibe of this shop and would definitely buy from here again.Disclaimer: I haven't used the knives yet.
