This 6-week culinary course was an incredible experience with lots of hands on experience, great people and insightful excursions.Translators Liz and Nene were amazing, not only translating, but helping us understand the cultural reasoning behind techniques and encouraging us to engage more with Sensei. The staff was also very flexible, even changing the curriculum to let us process huge fish at a market and debone whole chickens when we asked. A visit to Sensei’s old restaurant in Tokyo (at our own expense) really made the curriculum click and was a powerful experience. My main advice for future students is to be proactive; Sensei is traditional and won't voluntarily ask you to take over, so make sure to ask questions and offer to jump in—he is more than happy to let you lead when you ask.I stayed in Numazu for the whole course and had a 50 min commute every morning. All in all, it was a great cultural and culinary experience with great people.
I participated in a 2 day course at the culinary institute. On my first day, I was told that the chef does not speak very much so I should ask questions. During the course, I found myself trying to mostly learn by watching as there was no specific instruction provided. The chef was clearly very skilled and had years of experience, so you did get information by watching him. However, there were many times that my questions on "why is it done a certain way or how do you know when to remove it? or even what are some things to notice while doing something, would all be answered with "it's just experience". This to me was very disappointing as I was not learning anything new. I understand that I will not become an expert at something in two days however, I would have certainly preferred to get more guidance and have my questions answered. If you are someone who can learn by just watching, this would be an excellent course. However, if you prefer to have someone explain what they are doing throughout the process, I would recommend taking a course somewhere else. Having paid so much money, I would have like more instruction or at the very least someone answering my questions. I also recommend really asking specific questions on what is included in your course, as there seemed to be some confusion with the administration I spoke to before starting and the actual class so I didn't fully get the experience that I signed up for. Overall the school was very clean and the view to cook was very beautiful. They did answer my questions on different types of Japanese cuisine and the food turned out delicious. If their instruction improves, it could be worth the money.
