I feel very lucky that a chef friend of mine recommended Yoichiro's shop to me when I mentioned I was interested in investing in a few knives in Japan. Yoichiro is incredibly knowledgeable and his internationally accessible interface with detailed English descriptions makes choosing a knife easy, even for knife novices! He seems to know of practically every knife forger in Japan and does a beautiful job restoring old knives and sharpening new ones. If you are looking for high quality yet affordable Japanese knives but don't want to fall into a tourist trap, this place is for you! Yoichiro is very communicative, kind and happy to educate you on the different types of knives, materials, and makers for your needs. He was even willing to meet me in Osaka for hand delivery, during which I got to ask him for advice using the knives in person while he also kindly taught me the meaning behind the name of one of the knife manufactures. I've loved using my Nakiri so far and feel much more confident knowing how to properly care for it based on Yoichiro's advice. Yoichiroknife will absolutely be my go-to shop for future knife purchases in Japan!
