It was truly a pleasure to be hosted by Hidefumi-san and his wife at Hummingbird Restaurant in Hakuba. The food was exceptional, clearly prepared with great love, care, and dedication to the craft. We felt especially fortunate to dine there this year, as Hidefumi-san had only recently recovered from an operation. Seating is thoughtfully staggered, as he cooks for only one table at a time, creating an intimate and unhurried dining experience. To top it all off, the couple personally comes out to send guests off after the meal—a small but touching gesture that leaves a lasting impression.

Such a lovely place, hosted by a truly warm and welcoming couple. We ordered the Ginger Pork, Beef Yakiniku, Zosui, and Chicken Flambéed—everything was freshly made and absolutely delicious. There’s a beautiful Japanese twist to Western food that really stands out.We loved what the chef prepared, and the lady of the house served every dish with so much care and warmth. A special shoutout to the Meat Loaf and Ginger Pork—both were outstanding.The ambience, set in a charming cottage-style home, adds immensely to the overall experience. Highly recommended.

Had an amazing experience at Hummingbird! Super cozy vibes with really great home cook food! The owners were super friendly and sweet as well!It was their first day opening in 2024 and we had the greatest pleasure of being the first table served!! Will definitely come back again the next time I visit Hakuba!!All the dishes we tried were amazing. The sauce for the tofu salad was so so amazing!! and the risotto and banana cake hot chocolate with vanilla ice cream were so so heart warming.If you drink, try their hot sake and apricot liqueur as well!! Cash only. Had to wait 45 min after our dinner was over so the owner could drive us to an ATM. Not a great way to end an otherwise nice dinner. I understand that Japan is generally a cash-only country. But if you are going to charge almost $150 USD for dinner you really need to have a credit card machine.

A cozy and cute Mom & Pop styled restaurant. After being closed 2 1/2 years due to pandemic rules.. Hummingbird reopened in December 24 2022 .The restaurant is only 6 tables and the food is what I am guessing is considered Home-cooked Japanese food and it was delicious.Portions were quiet large so recommend to pick out a few dishes and share. We ordered Edamame, green salad, Japanese styled sautéed chicken, and fried noodles, hot chocolate banana cake and everything was just amazing.The owners are also very personable and came to chat for a bit and walked us out the door when we were ready to go.A few things to note…- do make reservations, busy season you should call ahead 2-3 days before- cash only- sit back and relaxDefinitely recommend if you are in Hakuba area!

We’ve been coming to Hakuba for four seasons and eating here is always the highlight. Hummingbird is run by a Japanese couple who take care of you from the moment you step in, all the way through to waving goodbye to every guest at the front door. The food is very home style and authentic. The beef stew and hot chocolate banana cake being my personal favourites. We all can’t wait for our visit next year and can thoroughly recommend this place to any who pass through!
