I was so happy to find this legit shop selling Japanese “binchotan.” The owner is super friendly, and of course very knowledgeable. I explained that I wanted to bring some back to a friend in New York who is serious about grilling and he helped me decide which wood to buy and cut it into what he thought would be a better length. He also explained the different curing processes used for the different types, which was so interesting. I highly recommend supporting this local shop!
